On the Barbecue

By far, the most popular method of cedar plank cooking!

1.Soak Equa Cedar Grilling Plank for 2-6 hours  (the longer the better). Our Standard 11.75″ x 5.5″ and Premium 12″ x 6″ planks will fit in most casserole dishes or standard oven pans. If you are using our 18″ x 8″ plank you will need to use something bigger. Our large format cedar plank fits in most fishing coolers, or an extra-large aluminum baking dish from the grocery store will work.

2.Preheat BBQ for 5-10 minutes on high.

3.Put your choice of food (salmon, seafoods, chicken, veggies, beef, etc) on the soaked cedar plank and place on one side of the grill.

4.Turn heat down to low on the plank side, leave the other side on medium and close the BBQ lid.

5.BBQ for 10-30 minutes (time will vary depending on food and personal preference).

*IMPORTANT NOTE* The cedar plank may smoulder or smoke sightly, but should never flame. When using a cedar plank on the BBQ keep a water spritzer or bowl full of water close-by for if a flare-up should happen.

In the Oven

A delicious alternative to barbecue recipes, but it is important to use caution and follow these instructions.

  1. Soak Cedar Grilling Plank for a minimum of 3-6 hours (the longer the better).
  2. Preheat Oven to cooking temperature specific to chosen food.
  3. Place the cedar plank on a rimmed baking sheet. Put food on the soaked cedar plank.
  4. Add water onto baking sheet to completely cover pan – water should be enough to cover the bottom 1/4 of the cedar plank, but not to submerge it.
  5. Cook for amount of time specific to chosen food (depending on preference).

**NOTE** low temperature and longer cooking time will release a stronger flavor.

If you are using a reusable cedar grilling plank, it is important to clean it properly before storage.

Once the food has been removed from the plank put it into water to soak.  It can then be washed with mild soap. Rinse it thoroughly with hot water. Air dry or use a cloth to remove excess water. Finally, store it in dry location.

The majority of cedar planks you see on the market are not reusable because they are too thin (typically 1/8″).

Equa Trading’s 12″ x 6″ and 18″ x 8″ cedar grilling planks are 7/16th’s of an inch thick, giving them a much thicker and more durable grilling surface. Our premium planks can be used up to 4 times with proper care and cleaning.

Usually, a lower temperature and a longer grill time results in the most flavorful salmon. We recommend pre-heating your barbecue to between 350°F – 400°F. (keep in mind when you place your soaked cedar plank on the grill the temperature may decrease slightly).

If you are using a 2-burner barbecue: once you have pre-heated your grill, turn down the heat on the side you place the plank, and turn up the heat slightly on the open grill side. If you are using a 3-burner barbecue, place your plank on the middle element and turn its temperature down to low. Doing this helps to ensure your cedar plank will not over heat and dry up too fast.

Cedar planks can be soaked for as little as 2 hours before grilling or they can be soaked for as long as 6 hours. The longer the wood is given to absorb water, the better your food will cook and more flavor will be released.

In addition to soaking in water, wooden grilling planks can be soaked in wine, sake or cider.

However long you choose to soak for, be sure to have a spritzer bottle beside your barbecue to quickly manage any hot-spots or flare-ups on the cedar plank.
